3 Ingredient Cookies

Yep… you heard me right. Only 3 ingredients to some delicious cookies! What’s more, they take only 15 minutes to make. They’re also really versatile- you can add whatever your heart desires. Here I’ve gone for the classic chocolate chip, but you could add nuts, seeds, dried fruit, spices. In fact right now I’m envisioning a carrot cake flavour made with grated carrot and spices, topped with a creamy icing. Maybe an idea for a future recipe post?

Ingredients:

1 over ripe banana

1 1/2 cup rolled oats

2 tbsp nut butter (I used almond butter)

1/3 cup add-ins of your choice e.g chocolate chips, chopped nuts

Method:

  1. Preheat the oven to 200°C and line a baking tray with greaseproof paper.

  2. In a large mixing bowl, mash the banana until smooth, then stir in the nut butter and oats.

  3. Add any extras and stir to combine.

  4. Flatten balls of mixture into 6 to 8 cookie shapes and place on the baking tray.

  5. Bake for 6-8 minutes or until golden and firm.

  6. Leave to cool and enjoy!
