Pistachio & Cranberry Snack Bars

Packed full of delicious nuts, fruit, seeds and chocolate chips, these snack bars are both delicious and full of goodness! With plenty of fibre and protein from the oats, nuts and seeds, they’re great for a mid-day snack or even an on-the-go breakfast.

Ingredients:

1/2 cup finely chopped pistachios

1/2 cup finely chopped walnuts

1/2 cup rolled oats (gluten-free if necessary)

1/2 cup oat flour

1/2 cup ground flax seed

2 tbsp chia seeds, combined w/ 6 tbsp water

1 tbsp soft light brown sugar

2 tbsp maple syrup or honey

2 tbsp nut butter of choice (my fave is almond butter)

2 tbsp coconut oil

1 tsp almond or vanilla extract

1/4 cup finely chopped cranberries

1/4 cup dark chocolate chips

Method:

  1. Preheat the oven to 180°C and line an 8x8 inch baking tin with greaseproof paper.

  2. Measure out the chia seeds and stir through the water, allow to sit for 10 minutes or until thick.

  3. Add the nuts, oats, seeds and sugar to a large mixing bowl and combine well.

  4. Next, add the chia seeds, coconut oil, syrup or honey, nut butter and almond or vanilla extract, stirring thoroughly until it forms a thick and sticky mixture.

  5. Stir through the chopped cranberries and chocolate chips.

  6. Transfer the mixture to the baking tin and spread evenly, then pack down tightly with the back of a spatula.

  7. Bake for 18-25 minutes until golden and firm to the touch.

  8. Leave to cool and then slice into bars or squares.
